The third and final release from cask 1313, this time finished in a Pedro Ximenez octave for 1 year.
This is a brilliant marriage of sherry and peat. The PX sherry octave doesn’t dominate but it’s resolutely there, framing the powerful smoky distillate. The Ardmore character shines though with fresh, earthy peat and savoury notes resulting in a unique expression and a style that’s hard to find these days.
Aultmore 11 Batch #2
Speyside- Refill Sherry Hogshead

Bottled just 3 months on from batch 1 and from the same cask, our 2nd batch of Aultmore is not the carbon copy you might expect. This batch reveals more distillery character as well as a touch of smoke.
The sherry cask influence is refined, clean and elegant, complimenting the lighter character of Aultmore.
Taming the strength to 48.5% gives a more open whisky yet retains body and depth easily lost at lower strengths.
Blair Athol 13

Glenshiel 10 year old Single Malt Scotch whisky from an unnamed Highland distillery.
Matured exclusively in a first fill bourbon barrel imparting lashings of vanilla, toffee and coconut.
Give this one a little time to develop in the glass and you’ll be rewarded with the aromas of apple crumble and thick custard mingling with soft spices.
A light oiliness on the palate adds weight and soft dusty oak spice balances the sweeter elements.
A delightful, whisky for those that appreciate a high quality bourbon cask.

Complex, approachable and with depth of flavour beyond it’s years, this is a wonderful example of harmony between cask and spirit.

Fresh and exciting yet elegant and wonderfully structured. Everything you want from a Single Malt Speyside whisky!
Soft stone fruit sweetness is perfectly balanced with gentle spice and a hint of liquorice. This whisky has a superb oily waxy texture that adds extra depth to the experience.
A drop of water opens everything up and releases more fruits, floral notes and oak spices. It’s like an old fashioned sweet shop, but for adults only at 59% abv cask strength.
11 years in one single bourbon cask has imbued this whisky with the superb quality Linkwood distillery is celebrated for. No wonder Master blenders try and keep it all for themselves!

Limited to a mere 67 bottles – Batch 2 of 3 from a single bourbon cask.
Our mission was to bring you three different whiskies at three different ages, all from cask #1313/2009.
Batch 1 gave us an exciting 9 year old Oloroso finished delight, adding rich spiciness. Batch 3 is now being finished in a small PX cask and now the highly anticipated batch 2 lets you experience the original bourbon cask at 11 years of age.
This is a completely unique window into the finishing and ageing process of whisky.
Batch 2 introduces softer more rounded Highland peat than it predecessor but it’s equally big on flavour and character with a freshness and vibrancy that is sure to delight.
Ardmore 9 Batch #1

Explosive highland peat tamed by Bourbon and Oloroso Sherry casks, this is flavour with a capital ‘F’. After 7 years maturing perfectly well in a bourbon cask we couldn’t help ourselves and transferred a small parcel of this peated Highlander to one of our very own 55 litre sherry cask for a further 2 years. With a yield of just 72 bottles this is a wonderfully complex sweet smoky treat. Be quick, this won’t hang about long…
Ben Nevis 18 (1996)

An exceptional single malt whisky from Ben Nevis distillery, aged for 18 years in a single bourbon cask.
Before we refurbished our Shed in 2019 we put our last few cases of Ben Nevis into storage, safe and snug in a secret location in Scotland.
It’s a stunning whisky that deserves to be enjoyed, so when we teamed up with The Whisky Wire to take part in one of their famous tasting events, it seemed like the right time to release the last of this special dram.
Overtly fruity with highland toffee, coconut and vanilla, toasted oak and strawberry and cream boiled sweets. A superb whisky, full of surprises!

Vat One
Highland, Speyside- Sherry hogshead

The Sipping Shed’s first bottling.
A blend of four exceptional single malts.
Tamdhu, Glengoyne, Glenrothes and the family run Speyside distillery that prefers not to be named (yes, that’s the one!).
Each was a minimum of 6 years old when they were introduced to each other by means of a sherry cask. 6 years later they’d been getting on so well it was time to introduce them to the world at large.
The result was a cracking dram exhibiting all the hallmarks of the distilleries and their famous sherried styles.
The name Vat One is a nod to the term Vatted Malt Whisky which regulators have decided must now be called Blended Malt Whisky.
