Nose
Night – the Aultmore is dark and sultry with the sherry cask adding rich layers of dried fruits and spices. The spirit holds its own with zesty fruit, sweet shortcrust pastry, heather and charming smoky edge.
Day – the Glenshiel with its sunny golden hue has plenty of vanilla custard, coconut shavings and fresh oak from its full maturation in a 1st fill bourbon cask. The spirit has perfect weight and adds orchid and tropical fruits, sweet spices and a yummy biscuit note.
Palate
Night – the nose follows through on the palate. The sherry influence is clean and precise providing the perfect backdrop for the Aultmore spirit with its citrus zing, heather, soft smoke and gentle minerality to balancing the sherry notes. Perfect for an evening around a fire.
Day – Juicier than expected; fruit crumble with lashings of thick homemade custard. The 1st fill bourbon cask is quite evident yet wonderfully integrated with the juicy, fruity, slightly oily distillate and its biscuit-y notes. A joyous ray of sunshine in a glass.
Finish
